Continuously exemplifies the Greenwood Communities and Resorts (GCR) mission, values and customer service philosophy of GCR in job performance and in relationships to others.  This position is responsible for leading all line cooks through preparation and operation of kitchen duties. Sous Chef will assist Chef de Cuisine with all daily functions of the restaurants and catering.

ESSENTIAL JOB FUNCTIONS

  • Prepare meats, seafood, vegetables and other items required for line and special function purposes.
  • Carefully follow standard recipes when pre-preparing and preparing all times.
  • Use food preparation equipment according to manufacturer's instructions.
  • Have a good understanding of restaurant compliance under DHEC regulations for the state.
  • Clean work station.
  • Return unused food products to proper storage areas.
  • Assist with preparation of other food products on serving line as needed.
  • Consistently use safe and sanitary food handling practices.
  • Ensure that soiled equipment is sent for proper sanitation.
  • Lead other line cooks ensuring proper prep levels for daily business.
  • Supervise kitchen staff in absence of Chef de Cuisine ensuring schedule compliance and standard production.
  • Offer creative ideas to improve food offerings and minimize menu item costs.
  • Check in food deliveries cross referencing the order.
  • Place appropriate orders in absence of Chef de Cuisine.
  • All Other Duties as Assigned.


GENERAL QUALIFICATIONS: EXPERIENCE, KNOWLEDGE, SKILLS

  • 5 plus years as line cook or sous chef.
  • Appropriate skills to cook in front of customers.


EDUCATION/LICENSURE/CERTIFICATIONS

Culinary degree from accredited school, qualified apprenticeship, or comparable work experience

Required:  High School Diploma or equivalent. 

Must be able to speak and understand the primary language(s) used in the workplace

Valid Driver's license with clean record.

WORK ENVIRONMENT

  • Must be physically able to work any station in a kitchen or serving/bar environment.
  • Should be able to lift 50-60 pounds on a continuing basis.
  • Long hours of standing.

SENSORY/PHYSICAL/MENTAL REQUIREMENTS

Capable of performing duties in a fast paced professional environment.

Able to stand and work for long periods of time.
